Roast and Stir Fry, Anyone
-Next time you decide to fix a pork loin roasted in the oven, try this. You can have pork loin with potatoes , gravy and carrots tonight and stir fry over rice tomorrow night and all you have to do is heat it up and make the rice. If you have about 2-3 pounds of tender loins, (usually about two small ones) that will be perfect for this method of preparing it. If it’s a large whole loin, you’ll want to cut, with the grain, approximately a 1-1.5 lb strip off and not season it as you would normally season your loin. I personally just like salt and pepper then I coat with gravy when I serve it. After seasoning and placing a small amount of water in the bottom of the pan, put your strip into your dutch oven along with your seasoned loin portion. Cover and bake at 350 degrees for an hour.
Remove the strip and place in a covered 4 quart casserole dish. Cover with stir fry vegetables and then coat with sweet and sour sauce of your choice. Be sure to cover veggies completely, do not stir. Cover and continue cooking for an hour. If your seasoned loin portion is also about 2 pounds put your pealed potatoes and carrots into the pot and cover. Continue cooking for an additional hour or until potatoes and carrots are cooked to your liking. If your loin is larger wait about 20 mins per pound over 2 lbs, then add vegetables for final hour. I like to peal one large carrot and put it in this pot to add to my stir fry mixture later on. You can still remove the stir fry mixture from oven while your loin continues to cook after it has been in there an hour.
After about an hour, check your carrots to see if they are done by sticking a fork into it to check if it is cooked. If done, remove both meals from the oven. Set stir fry aside and plate your loin and vegetables so you can make your gravy with the drippings in your pot. I like to add a little chicken bullion and water, to add more flavor and quantity to my gravy.
** Be sure you do not let your loin dry out. When your Loin can easily be separated and still very moist, it’s done. Watch your ends for signs of drying. I like my pork to be pull apart done, so you may want to adjust your cooking time for how you like it.
When your done eating. Take a sharp knife and cut your stir fry, pork loin strip, in to 1 inch pieces against the grain. Take a fork and and your knife to begin to pull apart these chunks, into bite size or smaller pieces. This works best when it’s still quite warm. Stir and check for any really big chunks that may have gotten away from you. Chop your carrot that is left from dinner and add to your stir fry and stir in lightly. Recover and place in the refrigerator. This stuff is usually best on day two anyway, so why not prepare early?

15 oz La Choy Sweet and sour sauce
28 oz can of stir fry vegetables
5 oz can sliced bamboo shoots
Adding some fresh carrot strips or thin slices to this is also very good if you did not have any left over from the roast dinner.
You can omit bamboo shoots and add another 28 oz cans of stir fry vegetables and add 2-10 oz bottles of sweet and sour if your loin is large enough.
Made 10 meals for about $1.50 each.

Other Ideas
Make mashed potatoes instead of baking them with the roast. Make extra gravy, so you can have hot pork and gravy over potatoes or make it a hot pork sandwich with mashed potatoes and gravy.
Use you left over loin roast for BBQ pulled pork. When your done eating your dinner, simply pull your pork and add BBQ sauce before placing in the fridge. Heat up one serving or all for delicious sandwiches on a bun.
Add your pork loin, cut into pieces or cut and pulled, to your left over gravy and place in a freezer bag for next week or one of those nights you need a quick meal and place over pasta and serve peas and carrots for a vegetable.
Cut it up and add to Ramen noodles for lunch, not a bad meal for under $1.00
Slice it up and heat in microwave, to put in a flour tortilla wrap with vegetables and dressing of your choice. I prefer miracle whip. 🙂 Also like it with pineapple pieces, cucumber pealed and de-seeded and sweet and sour sauce.
Tip
If you make a rather large loin and you do not want to have pork something, every night for dinner all week, you can add it to some kind of freezable sauce, such as gravy, BBQ or sweet and sour (do not add vegetables) and freeze it for a quick easy meal in a flash. When reheating in microwave oven, please heat in glass. The sauce will get very hot around the edges and will wreck plastic containers and possibly contaminate it with the melting plastic. Always cover it and stir every minute when heating large quantities.
